Rainman's Sweet-Hot-Sour Glaze

Ingredients:

 1/4 stick butter or margarine.

 3/4 Cup Sugar.

 1 Large White Onion, Diced (about 1 1/2 Cups)

 2 Medium-Sized Jalapenos, Diced (Retain pith for heat)

 1/2 Teaspoon Salt

 1/2 Teaspoon Cinnamon

 1/3 Cup Red Wine Vinegar

Procedure:

  1. Melt butter in a sauté pan over high heat. Add onions, jalapenos, and salt and cook while stirring until liquid is reduced and onions are beginning to caramelize. (About 8-10 minutes)
  2. Add sugar and cinnamon and reduce heat to medium. Stir constantly until sugar melts completely and begins to caramelize. Cook for another 5 minutes.
  3. Add the vinegar and stir for another minute or so.
  4. Pour contents of pan into a blender and blend until smooth in consistency. (BE CAREFUL of hot liquids in the blender! Start on slowest speed and build. Leave a small crack in the lid to release pressure.)
  5. Let cool and store in the fridge in a plastic tub. Excellent for stir-fry vegetables, or as a glaze for roasted or grilled chicken, or also my Pork Chop Invention.
