Sauteed Julienne Veggies

Ingredients:

 1 Large onion (brown or white)

 3 Cloves garlic, minced

 2 Medium red peppers

 2 Medium zucchini squash

 2 Limes (or 1 Lemon), juice of

 2 Tablespoons butter (or margarine)

 1 Teaspoon paprika

 Salt & pepper

Procedure:

  1. Cut the onion into medium dice, and slice the peppers and zucchini into thin julienne strips.
  2. Add the butter to a med-hi sauté pan and when melted, add the onions. Reduce heat to medium and sauté onions until soft and translucent.
  3. Add the peppers and saute until they become soft (about 2 minutes).
  4. Add the zucchini, garlic, paprika, and salt and pepper to taste. Stir and sauté for another 1-2 minutes until pan is dry.
  5. Add lime (lemon) juice and stir to deglaze the pan. Cover, reduce heat to low, and steam in citrus juice until ready to serve.
