The Best Damn Turkey Soup Ever

Ingredients:

 2 Tablespoons Olive Oil

 2 Glass Jars, Homemade Turkey Stock

 1 Large Yellow Onion, Chopped

 2 Jars Of Fresh Water
(same jars used for stock)

 1 Large Jalapeno, Diced Small

 1 Lg Package (1 Lb.+) Fresh Cheese Tortellini

 5 Stalks of Celery, Diced

 1 Bunch Cilantro Leaces, Chopped 
(or Parsley)

 1 Large Red Pepper, Diced

 Juice of 1 Small Lime 
(or half of a large lime)

 5 Large Carrots, Sliced @ 1/4 Inch+

 Fresh Ground Pepper & Seasoned Salt

 3 Fresh Cloves Garlic, Minced

 1/2 Lb Turkey Meat
(even shaved coldcuts works!) 

Procedure:

1) Heat olive oil in a soup pot over medium heat. Add diced jalapeno and stir-fry until soft.  

2) Add onions and cook/stir until past translucent stage and starting to caramelize (3-4 minutes). Season with season salt and cracked pepper.  

3) Add celery and red pepper and cook for another 3-5 minutes until they are soft. 

4) Stir in the carrots and garlic.  Continue to stir for several more minutes until the garlic cooks and becomes fully fragrant. Season again with salt and pepper. 

5) Add the turkey stock and water, stir, and bring to a rolling boil for 2 minutes. 

6) Reduce heat to a simmer and add the turkey meat and the tortellini. Stir every 10 minutes as it simmers for about 1 hour.  The totellini will puff up and float, so stirring keeps them absorbing water.  Some tortellini may break up and release their cheese...don't worry! this is good since it adds flavor depth to the soup! 

7) A couple minutes before you want to serve it, squeeze the lime juice in, add the cilantro leaves and stir for a few minutes.  Taste the broth and correct the seasoning to your taste. 

8) The tortellinis end up being awesome little cheese-filled dumplings that complement the soup and veggies really well!
