Salmon Dip for Crackers or Toasted French Bread Croutons.
Ingredients:
1 Can, Skinless-Boneless Salmon
1 12 oz. Package of Cream Cheese
3 Tablespoons Finely Minced Onion
1/4 Cup Lite Mayonnaise
Season Salt, Pepper, Paprika
Procedure:
Soften the cream cheese in a microwave oven for about 1 minute at low-med power setting.
Drain the liquid from the can of salmon.
Mix together the salmon, cheese, and onion. Add salt and pepper to taste.
Fold-in the mayonnaise, transfer to a dip bowl, sprinkle the top with paprika and serve with crackers & veggies.
To use as a hors d'oeuvre spread the mixture on French bread croutons, add some chopped scallions, and some crumbled feta or blue cheese on top. Place under a broiler until the cheese melts and begins to brown. Remove and serve immediately.
