Kelly's Pork Chili.

This recipe came to me from my good friend (and quite a gourmet in her own right) Natalie Kim. She credited it to someone named Kelly, who I don't know personally....but I am happy Kelly came up with this recipe! It is a real change to the standard beef and chicken chilis......quite a good mixture!

Ingredients:

 1 - 1.5 Lbs Pork Butt, cut into cubes.

 2 Medium Onions, diced.

 3-4 Garlic Cloves, minced.

 1 Large Can Stewed Tomatoes.

 1/2 Small Can Jalapeno Chiles.

 1 Large Can Ortega Chilis, torn into pieces.

 1.5 Cups of Chicken Stock.

 Olive Oil, Seasoned Salt, Pepper, Corn Starch.

Procedure:

  1. Heat a skillet to medium heat and add a few tablespoons of olive oil. Season the pork with salt and pepper and begin to brown the pork in the oil.
  2. Add the onions and cook until translucent. Add the garlic and stir together for 1-2 minutes to activate the garlic.
  3. Move the sauteed pork, onions, and garlic to a crock pot. Add the tomatoes, jalapeno & ortega chilis, chicken stock, and 1-2 tablespoons of corn starch for thickening.
  4. Set the crock pot on high heat and simmer for 2 hours, stirring every so often. Taste and correct the seasoning with salt and pepper before serving over rice.
