Grilled Chicken A La Modena


 4 Boneless, skinless chicken breasts

 3 Cloves garlic, minced

 2 Limes (1 Lemon), Juice Of

 1/4 Cup Balsamic vinegar

 2 Tablespoons Mixed Italian Seasonings (Oregano, Basil, Thyme)

 Seasoned salt & pepper to taste


  1. Clean the chicken, remove all the fat and place in a glass dish.
  2. Combine all of the rest of the ingredients to create a marinade, and pour over the chicken. Marinade for 2 hours in the refrigerator. If you are pressed for time, you can poke holes in the chicken with a fork, and marinade for one hour.
  3. Turn the breasts over in the marinade every 30 minutes. Preheat a grill to high heat.
  4. Place the chicken on the grill and reduce the heat to medium, baste with half of the marinade. Turn the breasts over after approximately 4 minutes, and baste with the remaining marinade. Grill for another 4-5 minutes, until done.
  5. Serve immediately. Goes great with grilled/roasted vegetables, esp. asparagus!
