Rainmom's Minestrone 4 the Heart!

Ingredients:

 2 Tablespoons Olive Oil

 1 Large Can Tomatoes

 1 1/2 Cups Onion, Chopped

 1 Large Can Tomato Sauce

 1 Cup Carrots, Sliced

 1 Small Can Tomato Paste

 1 Cup Celery, Sliced

 1 Large Can Chicken Broth

 1/2 Cup Red (Green) Pepper, Diced

 1 Teaspoon Oregano

 2 Teaspoons Garlic, Minced

 1 Teaspoon Parsley

 4 Cups Zucchini, Cubed

 3 Cups Cabbage, Sliced Thin

 1 20 Oz. Can Garbanzo Beans

 1 20 Oz. Can Kidney Beans, Drained

 1/2 Pound Green Beans, Cut

 3/4 Cup Elbow Macaroni

Procedure:

  1. Add olive oil to a soup pot over medium high heat.
  2. Add onions and sweat until translucent. Add carrots, celery, and pepper and cook for 5-10 minutes.
  3. Add the garlic and zucchini, reduce heat to medium low and cook for another 15-20 minutes.
  4. Add the tomatoes, tomato sauce, tomato paste, chicken broth, oregano and parsley. Stir until well mixed and reduce heat to low. Simmer for 1 hour.
  5. Add the cabbage, garbanzo beans, kidney beans, green beans, and macaroni. Add salt and pepper to taste, and simmer for an additional 30 minutes until the macaroni is cooked.
