Rainman's Kickin' Baked Beans!

O.K. No fooling around here.... if you are tired of those boring baked beans you buy in the cans at the store, and you like things spicy, but with FLAVOR and not just BLATANT HEAT, then you should enjoy these beans. The heat builds slowly in your mouth as you eat them....it is a really cool effect!

Ingredients:

 2-16 Oz Cans "Boring" Baked Beans
or Pork-N-Beans

 5 Strips of Bacon

 1 Medium Size Jalapeno Pepper, Diced
(seeds removed, vein retained for heat!)

 2 Tblspn. "Frank's Red Hot"
Hot Sauce

 1/2 Large Red Onion

 2 Tblspn. Brown Sugar

 2 Tblspn. Molasses

 2 Tblspn. Ketchup

 Seasoned Salt, Pepper

 

Procedure:

  1. Preheat oven to 300 deg. Fry the bacon over medium heat just to the point of crispness, turning once. Remove the bacon from the fat, drain on paper towel and let cool.
  2. Slice the half of the onion lengthwise into 5-6 sections. Separate the layers of the sections. Add the onions to the hot bacon fat and begin to sauté while stirring. Season with seasoned salt and pepper.
  3. Sauté onions until they become translucent and limp (about 4-5 minutes), then add the diced jalapeno. Stir for another 1-2 minutes to allow the pepper to cook and give its heat to the onions. Remove from heat.
  4. Open the cans of "boring beans" and pour them into an 11" x 7" glass baking dish. Break up bacon strips into small pieces and add to the beans.
  5. Add the onion/pepper sauté, molasses, brown sugar, ketchup, and hot sauce to the beans and stir well.
  6. Bake the beans, uncovered in the 300 DEG oven for about 1 to 1 1/2 hours.
