Pizza Without Too Much Fuss

Of course, the very best pizza is one that you spend all day making: Mixing and proofing the dough yourself; creating that perfect sauce blend of sweetness, tang, and herbal flavor; allowing the sauce to slowly bubble and simmer while filling the house with its wonderful aroma. But if you only have a couple hours, and still want some good pizza, give this one a spin!

Ingredients:

 1 Large Boboli Ready-made Pizza Shell.

 1 Large Red (Sweet) Pepper

 1 Large Onion, Quartered

 1 Can Tomato Sauce

 4 Cloves of Garlic, Peeled

 2 Medium Tomatoes, Chopped

 Olive Oil

 1/2 Teaspoon of both Oregano & Thyme

 1+ Cup Mozzarella Cheese, Grated

 You Favorite Pizza Toppings

Procedure:

  1. Preheat oven to 350 Deg. F.
  2. Coat a baking pan with about 1 tablespoon of olive oil. Place the garlic, pepper, and two of the onion quarters in the pan, season with salt and pepper, and place in the oven to roast for about 30-40 minutes (until the pepper is "deflated" and the onions begin to brown).
  3. In a saucepan over medium-high heat, add a little olive oil and add the remaining onion (diced) and sweat them until they are translucent. Add the chopped tomatoes, oregano, thyme, and season with salt and pepper. Continue to cook for 3-4 minutes then add the tomato sauce.
  4. Remove the roasted veggies from the oven and peel/seed the pepper. Put the roasted pepper, onion, and garlic into a food processor and blend until smooth. Add this to the tomato sauce and reduce heat to a simmer. Let simmer for at LEAST 30 minutes for the flavors to blend. Taste for seasoning and correct with more salt/pepper as required. (The pepper introduces a slightly sweet taste to the sauce).
  5. Place the Boboli crust on a baking sheet, ladle as much sauce as you prefer on it, cover with shredded mozzarella, and your favorite pizza toppings.
  6. Bake at 350 Deg. For 15-20 minutes until the cheese gets bubbly.
