Vegetable Corn Chowder.

Ingredients:

 1 Box (Quart) Creamy Sweet Corn Soup (available at Trader Joe's)

 6 Oz. (half a bottle/can) of good beer (I drink St. Pauli Girl!)

 1 15 Oz. Can of Sweet Corn (Trader Joe's is the best canned corn ever!)

 1 Large Onion, diced

 1 Cup Zucchini, diced

 1 Cup Red & Orange Peppers, diced

 Olive Oil. Seasoned Salt, Pepper

 Parmesan Cheese & Fresh Parsely.

Procedure:

  1. In a soup kettle over medium heat, cover the bottom of the kettle with olive oil and add the diced onion. Sweat the onion until it is translucent.
  2. Add the peppers and corn and continue to sauté until the pepper is tender (a couple minutes). Correct the seasoning (and taste!) by adding seasoned salt and pepper.
  3. Add the zucchini, corn soup, and beer and turn heat down to low and simmer (covered) for about 1 hour.
  4. Check the seasoning (taste!) and add salt and pepper as required. Serve in a bowl with a garnish of freshly chopped parsley and parmesan cheese.
